  In Jinan, in addition to the sweet and sour Yellow River carp and braised intestines in brown sauce, Huang Family barbecue of Zhangqiu is also a popular signature delicacy. Huang Family barbecue is famous for its yellow and crispy skin, charred outside and tender inside, and it’s fat but not greasy, with long-term storage. The cooking skills of “Huang Family barbecue“ were selected into China's intangible cultural heritage in 2010.

  Huang Family barbecue originated in the late Ming and early Qing Dynasties, created by the Huang family in Xiuhui Street, with a history of more than 300 years. It is said that, inspired by Mongolian roasted lamb, the Huang family had often roasted meat. However, they mainly roasted pork which was cut into pieces, because pigs had been raised here for generations .

  By the end of the Ming Dynasty, the unique technique of roasting whole pigs with a special stove was used, and the barbecue became a famous national delicacy.Completely different from the barbecues in other places, a whole pig was roasted, smeared with secret seasonings, and the outermost layer of the roast was yellow and crispy, and the meat inside was tender and juicy.

  There are various ways to eat Huang Family barbecue. It is delicious when eaten alone,and even more unique when stewed with cabbage and tofu. In addition, the methods of barbecue paring with sesame seed cake, pancake, or Zhangqiu green onions and sweet sauce are also popular.

  After the whole pig roasted in a special high-temperature oven, the moisture and the fat is reduced, while the protein relatively increases, therefor it’s healthy. The scene of a whole pig hung in the butcher's shop , sold and cut also shows the generosity and hospitality of Shandong people.

  每当说起济南的美食来,除了糖醋黄河鲤鱼、九转大肠以外,章丘黄家烤肉也是一种广受欢迎的招牌美食。黄家烤肉以其皮黄酥脆、外焦里嫩、肥而不腻、久放长存闻名于世。“黄家烤肉”制作工艺在2010年入选国家级非物质文化遗产名录。

  黄家烤肉起源于明末清初,由绣惠街道黄氏家族创制,具有300多年历史。据传,因受蒙古人烤羊肉的启发,黄家也经常烤肉。不过,因为此地世代养猪,黄家主要是烤猪肉吃,而且是将猪肉割成块烤制。

  到明朝末年,黄家用特制的炉子烤制整猪,他们的烤肉成为驰名全国的风味名吃。这种烤肉和其它地方的烤肉完全不一样,它烤的是整只猪,抹上秘制的调料,烤出来的最外层皮黄酥脆,里边的肉嫩且多汁。

  黄家烤肉的吃法多种多样,单吃鲜香可口,若把烤肉与白菜豆腐一起烩制,则更是别具风味。另外,烧饼夹烤肉,单饼卷烤肉,章丘大葱、甜酱配烤肉等吃法,都深受群众欢迎。

  由于整猪经过特制高温炉焖烤后,水分降低,脂肪减少,蛋白质成分相对增加,这种烤肉也可算是一种健康食品。一整头猪挂在案头被大刀阔斧切来卖的景象,也彰显了山东人热情好客的豪爽劲儿。
