In Linyi, Shandong, there is a very special kind of breakfast called “Sa Soup“, which is loved by locals for its unique spicy taste.
Actually, Sa Soup, is a kind of meat porridge, which is mainly made of various meat, and several kinds of ingredients. Sa Soup is high in calories and full of flavor, and it is therefore especially popular in winter. Sa Soup is not only delicious and nutritious, but also has the functions of expelling cold, appetizing, diuresis, and relieving vomiting. Sa Soup was selected into the third batch of Shandong provincial intangible cultural heritage in 2013.
There are four important tips for eating Sa Soup, “hot, spicy, fragrant, and fat“, among which, “hot“ is the key. A bowl of hot Sa Soup can highlight the fragrance of sesame oil, the fatness of meat, the spiciness of pepper, and the thickness of the soup. Served with fried dough sticks, sesame seed cakes, green onion pies, or steamed dumplings, it is a wonderful breakfast.
To get a more exquisite Sa Soup, you can also put an egg in the bowl, and the boiled egg drop and the soup will blend together, making it mellow and silky. If you want to get Sa Soup from a famous local shop, you have to queue up at about 3 :00 am. Many people queue up before dawn in order to eat the soup in first pot, which is a spectacular scene.
To make such a delicious soup, you need to boil the meat, slice it, cool it off, and then put it into the bone broth, and add seasonings such as star anise, bay leaves, cinnamon, pepper, nutmeg, ginger, etc. Mix some flour and water till they blend, keep stirring and boiling it. The cooked soup is not stinky, but with an attractive fragrance.
The enthusiasm of Linyi people is condensed in this bowl of soup, bringing warmth to the winter morning.
在山东临沂,有一种极受欢迎的特色早餐“糁”,因独具一格的香辣口感备受本地人的喜欢。
糁,其实就是一种肉粥,以多种肉类为主,又加以数种配料,热量高,味道全,在冬季特别受人欢迎。糁不仅味美可口,营养丰富,而且还有祛风驱寒、开胃、利尿、止呕等功效。2013年入选山东省第三批非物质文化遗产。
喝糁有四大讲究,即“热、辣、香、肥”,其中“热”是关键,一碗热糁,更加能突出香油的香,肉的肥,胡椒的辣,浓汤的稠。一碗热糁配以油条、烧饼、油饼、蒸饺等食用,是美好的早餐享受。
喝糁时还可以在碗里打个鸡蛋,热糁一冲,烫出的蛋花和糁汤融为一体,醇厚丝滑。要想吃上当地有名糁店的糁,凌晨三四点钟就得去排队,很多人为了能喝到头锅糁,天不亮就排起了长队,那场景着实壮观。
做糁的学问主要在汤上,将肉煮熟、切片、晾凉,再放入大骨熬成的高汤里,加八角、香叶、桂皮、胡椒、肉蔻、姜等调料,以面粉汤等勾兑,不断搅拌,反复煮熬。熬好的粥汤不腥不膻、浓香诱人。
临沂人的热情凝结在这一碗浓浓的糁里,给冬日的早晨带来温暖。
