  Xiajin Pocket Chicken is one of the famous food in Xiajin County, Dezhou City, also known as the Seafood Chicken.It is said that this dish has a history of one hundred years - it was first served in the early Yuan Dynasty and became popular in the Qianlong Period of Qing Dynasty.Cut by chopsticks, the fillings of the dish can be revealed - the meat is fresh and tender, fatty but not greasy.

  夏津布袋鸡是山东省德州市夏津县名吃之一,又名海味什锦鸡。据传夏津布袋鸡始于元初,盛于清朝乾隆时期,距今已有百年历史。其味道鲜美,用筷一划,内馅露出,肉鲜馅大,肥而不腻,香嫩适口。

  Legend has it that the delicacy originated in the Yuan Dynasty, at the time when King Wuyi, who lived in Xiajin, married Princess Asinghai Beji, the daughter of Genghis Khan.The princess was a good cook. Using the deboned local chicken, she filled it with the stuffing, and made the “Cherished Chicken“, which was the predecessor of the Pocket Chicken.The Pocket Chicken is made of well-selected materials in a unique way. With the neck bones, wing bones, body bones, leg bones and internal organs removed, the chicken was made into a “pocket“.The pocket is then filled with 16 kinds of ingredients such as sea cucumber, abalone, scallop, ham, bamboo mushroom and the like. After the opening of the pocket is sealed, the chicken will be deep-fried in oil until becoming golden brown.Followed by a procedure of steaming and decorations with green, red, and yellow-colored vegetables, the dish is finished.

  相传这道佳肴起源于元朝,当时居住在夏津的武毅王娶了成吉思汗的女儿阿剌海别吉公主。公主颇擅厨艺,她以土产鸡去骨、填馅,秘制而成“鄃饴珍味鸡”,这就是布袋鸡的前身。布袋鸡选料精良,制作别致,将鸡剔除颈骨、翅骨、身骨、腿骨及内脏,使其成为“鸡布袋”。然后按其比例装入海参、鲍鱼、瑶柱、火腿、笋菇等十六种佐料,将口封住,入油炸至金黄色。上笼蒸制,并配以青、红、黄等色蔬菜拼成图案,布袋鸡制作完成。

This dish is made carefully according to the scientific guide by nutritionists, supplemented by more than ten kinds of healthy ingredients.The Pocket Chicken is cooked to a yellowish red color, with its intact body in a uniquely elegant shape.Once the chicken belly is gently cut, a pleasingscentleaks out, and the meat is so soft and tender that one cannot resist the temptationtotakeabite.In November 2021, the technique of making Xiajin Pocket Chicken was selected into Shandong provincial intangible cultural heritage.

  经过多年的演变,如今的馅料分成了不同的种类,其中也有以菌类为主的山珍馅,都是根据营养学家经过科学配比,辅以十余种配料调和而成。烹制好的布袋鸡色泽黄中透红、鸡身完整,造型美观独特。轻轻剖开鸡肚,其中包藏的馅料伴着清香露出,入口软嫩,令人无法拒绝。2021年11月,夏津布袋鸡制作技艺入选山东省省级非物质文化遗产名录。
