  Laiyang of Yantai City is known as the home of pears in Shandong. Deep soil and sufficient light in Laiyang create favorable natural conditions for pears to grow, thus making the fruits large, tender, and rich in nutrients. Despite its luscious taste, Laiyang pear also has medicinal functions such as quenching thirst, promoting body fluid, resolving phlegm, and moistening the lungs. In addition to the pear itself, “Laiyang Pear Syrup“ also occupies an important position in pear production industry.

  烟台莱阳,素有梨乡之称。因有土层深厚,光照充足等多种自然条件的眷顾,使得在此生长的慈梨果实硕大,肉质细嫩。其含有丰富营养的同时,也有着极高的药用价值,有止渴生津、化痰润肺之功能。其实除了梨本身,“莱阳慈梨膏”在梨产品中也占据着重要的位置。

  Originated in the late Qing Dynasty, the craftsmanship of Laiyang Pear Syrup was selected into the fifth batch of representative projects of Shandong provincial intangible cultural heritage in 2021. Classic Laiyang Pear Syrup is made from the authentic Laiyang pear named Ci Pear. The selected pears are washed with mountain spring water, then peeled and cored. With the pear wood ignited, the pears will go through nine rounds of low-temperature boiling and filtering, as well as twenty more manual processes. After the processes, the pears are steamed and simmered and then the fire is ceased in order for the pear juice to be precipitated and clarified. Collecting the syrup is the key part of the technique. The precipitated pear juice should be poured into a casserole, and then simmered slowly on charcoal fire, making the syrup silky, deep in color, with a beautiful amber light.

  莱阳慈梨膏的制作技艺起源于清朝末年,2021年,莱阳慈梨膏制作技艺入选第五批省级非物质文化遗产代表性项目名录。经典的梨膏由正宗的莱阳慈梨熬制而成。用山泉水将挑选好的莱阳梨洗刷干净,削皮去核。点燃梨木,经过九滤九炼的低温熬炼和二十多道纯手工工序,将梨蒸熟煨烂后停火,让梨汁沉淀澄清。熬制收膏,是考验技术的关键环节。将沉淀后的梨汁取上清液倒入砂锅内,木炭文火慢熬,熬制的梨膏绵绸柔韧、色泽深沉,泛有绝美的琥珀之光。

  However, one cannot ignore the effort needed for producing the syrup -- every 20 catties of pears are simmered slowly for 72 hours only to form 1 catty of pear syrup, which tastes sweet and delicate. One small jar of pear syrup, gathering the essence of a hundred herbs, is refreshing and heavenly for the taste.

  每20斤慈梨慢火熬制72小时才能形成1斤梨膏,口感香甜细腻。小小梨膏,聚集了百草精髓,食之清爽,直入心脾。
