  Zichuan Meat Pie is a traditional delicacy in Zichuan District, Zibo City, Shandong province, with a history of more than a thousand years. Made from flour, pork, scallions, sesame seeds, and soy sauce, the meat pie is specially known for its crispy crust and delicious filling.

  淄川肉烧饼是山东省淄博市淄川区的一种传统美食,有着一千多年的历史。淄川肉烧饼用面粉、猪肉、大葱、芝麻、酱油等制作而成,具有饼皮香脆、馅味鲜美之特点。

  Strictly speaking, the meat pie is not grilled by fire, but baked with heat, so its outside is particularly crispy and tender.The word “meat“ marks the most important feature of it: the ordinary pie isfilled with the minced meat, while Zichuan Meat Pie is filled with slices of pre-marinated meat.When making it, the cook needs to roll the dough into a bun-sized piece and wrap it with meat filling, then roll it out on the panel with a rolling pin. After that, the pie is put on a smooth convex porcelain, and pressed by hands with water to getthinner.Next, the cook dips the pie on a board that has already been covered with a dense layer of white sesame seeds, and then puts this 20-centimeter dia. pie into the oven. It usually takes 5 minutes for the pie to be fully cooked.The freshly baked meat pie is golden in color and crispy in taste, with the aroma of wheat and roasted meat.With all the air inside, the pie is so round and bulging that you can feel the meat slices “clattering“ of the rust when you shake it gently.

  从严格意义上讲,它并不是用火烧烤,而是用热气烘炙,所以特别酥嫩。一个“肉”字就标明了它的最重要的特色:一般的烧饼里面放的是搅成泥的肉馅,淄川肉火烧里面加的是成片的腌制好的肉片。在制作时,先将和好的面撮下馒头大小一块包上肉馅,然后在面板上用擀面杖擀一擀,接着放到一个光滑的凸形瓷器上,用手沾着水将它压得更加薄一些。这时往早已铺好密密一层脱皮芝麻的板子上一沾,一个直径20多公分火烧坯一贴就进烤炉了,一般5分钟左右就烤好了。新鲜出炉的烧饼焦黄酥脆,散发着面香、肉香、炙烤香。烧饼中间充满了热气,涨得圆鼓鼓的,用手轻轻一摇能感受到肉片在中空的面皮里“哗啦”作响。

  出炉的烧饼一边酥嫩,一边却软糯,口感极佳,当然也有不用肉的素烧饼。淄川肉烧饼深受百姓喜爱,因为它既是干粮又有“馅”,非常适合当主食。尤其在清冷的冬日早晨,对刚起床的淄川人来说,来个刚出炉的淄川大肉烧饼,舀上碗本地产的青石山小米粥,趁热咬上口烧饼,再喝一口粥,满嘴散发着芝麻、小麦、小米的清香味混合着鲜肉夹着葱花的酱香味,一天都是幸福的。

  In 2016, the technique of making Zichuan Meat Pie was selected into the fourth batch of the expanded list of representative projects of Shandong provincial intangible cultural heritage.

  2016年淄川肉烧饼制作技艺入选山东省第四批省级非物质文化遗产代表性项目名录扩展项目名录。
