  In the city of Qingdao, people think of Liuting pork trotters when it comes to famous local dishes. Liuting pork trotter is one of the specialties of Qingdao, named after its origin in a block named Liuting Street. The food is bright in color, refreshing in taste and soft in texture, and is known as “the best trotters in the country“. Among the many brands of Liuting trotters, Zhou's Liuting Trotters is the best-known one.

  在山东青岛,只要一提猪蹄,很多人都会条件反射地想到“流亭猪蹄”。流亭猪蹄是青岛特色美食之一,因产自城阳区流亭街道而得名。该美食色泽鲜亮、味道清爽、口感软糯,有“天下第一蹄”的美誉。而在众多流亭猪蹄品牌中,又以“周氏流亭猪蹄”最为出名。

  According to historical records, Liuting Pork Trotters was first served in the Xianfeng Period of the Qing Dynasty, and became famous in the country. The time-honored brand “Zhou's Liuting Trotters“ is most authentic with a history of more than 160 years, and it has been passed down through four generations until now. In March 2016, the craftsmanship of making Zhou's Liuting Trotters was selected into Shandong provincial intangible cultural heritage.

  据史料记载,流亭猪蹄始建于清咸丰年,成名于世。而老字号“周氏流亭猪蹄”是最为正宗,至今已有160多年的历史,并传承到第四代。周氏流亭猪蹄制作技艺也于2016年3月列入山东省非物质文化遗产名录。

  Zhou's Liuting Trotters conquering the discerning taste buds of Qingdao people, is actually inseparable from the techniques handed down from generations to generations. It is known that each qualified pork trotter has to go through more than 20 processes of “trials“ to be selected, and the sauce is carefully made with dozens of precious spices and condiments. The cooks always devote particular care to selecting the trotters. It must be trotters cut from healthy pigs over 10 months old, and the overall size of trotters should also be symmetrical. Clean trotters must be soaked in water at room temperature to remove odor and residual blood, so that the cooked pork trotter will not have impurities nor unpleasant smells. Cooking is the key - it needs to be cooked in aged broth for two hours and stirred every half hour, during which the pork trotters are gradually soaking in a glossy red sauce and turned into a delicacy on the table.

  周氏流亭猪蹄能够征服青岛人挑剔的味蕾,离不开祖辈相传的工艺。据了解,每个合格的猪蹄制作出来,都要经过20多道工序“历练”,并选用上等猪蹄,添加几十种名贵香料、佐料,经过精心酱制而成。猪蹄的选择也很讲究,必须是10个月以上的健康猪身上割下来的猪蹄才行,猪蹄的整体大小也要对称。干净的猪脚一定要用常温的水浸泡,去除异味和残留的血液,这样煮熟的猪脚就不会有杂质和异味。烹饪是猪蹄制作的关键,需要用陈年老汤煮两小时,每半小时搅拌一次,在这个过程中,猪蹄慢慢吸收红色的酱汁,变成了桌上的美味。

  The trotters are kept intact, with the appearance of a tantalizing mahogany red color. Before serving, the trotters will be poured with soup to make the dish brighter and juicier. After taking the first bite, the delicious juice comes straight out of the meat. The lean meat that clings to the bones is interspersed with the soft, elastic skin, leaving you a lingering aftertaste.

  猪蹄保持了完整,外表呈现出一种诱人的桃木红色,在上桌前,猪蹄会浇以汤汁,让整个猪蹄看起来更加地鲜亮多汁。当食用时,猪蹄伴着些许汤汁,味道鲜美,尤其是紧贴在猪骨上的瘦肉,夹杂在软弹弹的猪皮之间,劲道爽脆,让人回味无穷。
