In the city of Tai'an , Shandong, there are not only Mount Tai, which enjoys the reputation of the head of the Five Famous Mountains ,but also the favorite Tofu Feast of the ancient emperors.
Mount Tai Tofu Feast can be dated back to ancient times when emperors came to Mount Tai offering sacrifices to heaven. Tofu is a kind of food connecting with pure hearts and few desires in Chinese culture and that is why it was chosen as the main food during the sacrifice. Mount Tai Tofu Feast , as an expression carrier of tofu-based cuisine, attaches significance to the integration of nutrition, taste, dishes and culture.
Developed by generations of chefs, the present Tofu Feast has become a unique work in Shandong Cuisine, consisting of more than 150 tofu dishes at most. With tofu, the main material, and many other ingredients, such as ginseng, nori, shrimp, pork, cabbage, mushrooms, eggs, bamboo shoot and the like, each tofu dish is nutritious, good-looking and tasty. Take Mount Tai Three Beauties Soup for example, the soup is slightly sweet and mellow, the cabbage is crisp and refreshing, and the tofu is smooth and delicate.
The refreshing taste of the dishes reflects the simple and unpretentious style of Tai'an people. After being tapped into and sorted out by the culinary team, the former royal feast has been served for the ordinary people nowadays, enriching the Taishan food culture. Mount Tai Tofu Feast was included in Shandong provincial intangible cultural heritage in 2016 and became a brand-new cultural tourism business card of Tai'an.
在山东泰安这片土地上,不仅有名扬天下的五岳独尊,还有古代帝王们最爱吃的豆腐宴。
泰山豆腐宴历史悠久,是伴随着历代古帝王在泰山的封禅祭祀活动应运而生的。豆腐在中国文化中是一种清心寡欲的食物,因此被选为祭祀时的主食。泰安豆腐宴作为豆腐料理的表现载体,讲究营养与美味、菜品与文化的融合。
经过几代厨师的精心打造,如今的豆腐宴已成为鲁菜中的绝品,最多有150多道豆腐菜品。以豆腐为主要原料,辅以人参、紫菜、虾、猪肉、白菜、香菇、鸡蛋、竹笋等配料,每一道豆腐菜肴都营养丰富,美观又美味。如泰山三美汤,汤汁微甜醇香,白菜脆内爽口,豆腐爽滑细腻。
这种饱含清爽之感的菜品,体现了泰安人做事朴实无华的风格。如今,经过烹饪团队的挖掘整理,昔日的皇家御膳被端上大众餐桌,丰富了泰山美食文化。2016年泰山豆腐宴被列入省级非物质文化遗产名录,成为泰安一张崭新的文化旅游名片。
