  Liaocheng, located in the west of Shandong, is a national historical and cultural city,with a history of more than 5,000 years.Liaocheng is a city with rich dietary culture. There is a traditional food called “Iron Rooster“, which is very popular among the locals.

  “Liaocheng Iron Rooster“, also known as Wei's Smoked Chicken, is smoked after being grilled with fruitwood.As the smoke from the fruitwood enters the chicken, its skin shrinks and turns black, while the fat slowly seeps out. As a result, the whole body turns dark and shiny. After being smoked and roasted, the chicken is firm and chewy, turning out to be an excellent side dish.

  Wei's Smoked Chicken was created by Wei Yongtai in the fifteenth year of Jiaqing’s Reign in the Qing Dynasty (1810), with a history of about 210 years. At that time, Liaocheng was close to the canal, with convenient transportation and the inflow of merchants. In order to facilitate the sale and the transportation of braised chicken to other places, Wei Yongtai upgraded the skills of“braised chicken“ which was “freshly made and sold“ to “smoked chicken“. Then the chicken could be stored for a long time through dehydration and being smoked. With the great prosperity of water transportation, the annual output of the smoked chicken had reached 10,000.

  “Liaocheng Iron Rooster“ was the honorary title given to Wei's smoked chicken by Mr. Lao She, a distinguished wordsmith. One day in 1935, Mr. Lao She and Professor Xiao Difei had a drink in a restaurant, and Professor Xiao brought a Liaocheng Wei's Smoked Chicken as a side dish. After tasting it,Mr. Lao She praised: “With the purplishblackskin,this chicken looks firm and unyielding.How aboutjust calling it an iron rooster?“ In 1985, after Professor Xiao Difei publishing a related article, the title of “Liaocheng Iron Rooster“ was well-known all over the country. The craftsmanship of “Liaocheng Iron Rooster“ was selected into the second batch of Shandong provincial intangible cultural heritage in 2009.

  聊城,位于山东西部,已有5000余年的历史,是国家历史文化名城。在饮食文化非常发达的聊城,有一种传统名吃叫“铁公鸡”,深受当地人的喜爱。

  “聊城铁公鸡”,也叫魏氏熏鸡,是用果木烧烤后熏制而成。随着果木烧烤的烟气进入鸡内,鸡皮紧缩变黑,脂肪慢慢渗出,鸡肉紧绷收缩,全身黝黑发亮。鸡肉在熏烤之后,肉质坚硬,嚼劲十足,是极好的下酒硬菜。

  魏氏熏鸡由魏永泰创制于清嘉庆十五年(1810年),迄今约210年。当时聊城紧靠运河,交通便利,商贾云集。为便于扒鸡远销外地,魏永泰通过脱水熏烤,将“现做现卖”的“扒鸡”升级为能够长期储存的“熏鸡”。待到漕运大兴,年产量可达万只。

  “聊城铁公鸡”是中国语言大师老舍先生赠给魏氏熏鸡的誉号。1935年的一天,老舍先生与萧涤非教授下馆子小酌,萧教授带去一只聊城魏氏熏鸡当下酒菜。老舍品尝后,称赞道:“你看这鸡的皮色黑里泛紫,还有铁骨铮铮的样子,干脆就叫它铁公鸡。” 1985年,萧涤非教授发布相关文章,“聊城铁公鸡”自此享誉四方。2009年,“聊城铁公鸡”制作技艺被列入第二批山东省非物质文化遗产名录。
